Allerdale Goat is soft, full-fat, unpasteurised, goats’ [[milk]] [[cheese]] made by Carolyn Fairburn at the Thornby Moor Dairy, Wigton, north Cumbria, which is produced with vegetarian [[rennet]].&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a firm texture and a slightly strong, clean, moist, sweet, almondy flavour. It is allowed to mature in cloth for up to five months and is pure white in colour.&lt;br /&gt;
&lt;br /&gt;
An oak-smoked version of the [[cheese]] is also available.&lt;br /&gt;
