Benabarre is an artisan pasteurised goats’ [[milk]] [[cheese]] from the place of the same name at the foot of the Pyrenees in the province of Huesca.  The area is surrounded by Montsec and the Sierra de Guara and the goats live on berries, acorns and natural herbs that grow in the Pre-Pyrenees which give a special flavour to the [[milk]]. 

The cellar matured [[cheese]] can vary according to the season.  In autumn and winter, it has a higher fat content whereas the rind is less mouldy summer and autumn.

Benabarre come in four varieties:

'''Queso Benabarre''' has a mouldy rind and a mild flavour

'''Queso Romero''' has a slightly mouldy rind, which is covered in rosemary and has a creamy texture

'''Queso Pirineos''' has a semi-hard texture

'''Queso Montsec''' is soft with a creamy texture
