List of ingredients for Prawn balchao pickle


* 100 g Dried shrimp
* 1 large Onion, peeled and chopped
* 5 cm (2") piece if Ginger, peeled and finely chopped
* 1 whole bulb of Garlic, peeled and crushed
* 4 tablespoons Tomato purée
* 140 ml Vegetable oil
* 1 teaspoon Nigella Seeds
* 1 teaspoon Turmeric powder
* 1 teaspoon to 1 tablespoon Freshly ground black pepper - see Chef's notes
* 1 to 2 tablespoons Chilli powder or your favourite Dried chillies, Ground to a powder - add a little at a time and test - you can always add more, you can't take it away afterwards!
* 1 to 2 tablespoons Cooking salt
* 3 tablespoon Jaggery, (White sugar is fine)
* 300 ml Malt vinegar
* Lime juice to taste
