* 2 large or medium Carrots
* 5 whole Star anise
* Half an orange, with peel, sliced
* 2 teaspoons Sea salt
* 1 tablespoon Demerara sugar
* Enough water to cover the Carrots by 5 cm
===Method===
* Peel the Carrots and slice lengthways into fairly thin strips, about 10cm thick
* Add the Spices, Salt and Sugar to the water
* Bring to the Boil and Simmer vigorously for 25 minutes or until cooked to you liking.
* Remove the Spices, drain and serve.
