* 900 g) (2 lb) Desirée or King Edward potatoes
* 2 oz (50 g) butter
* 4 tablespoons milk
* 2 level tablespoons crème fraîche
* Salt and freshly milled black pepper
===Method===
* Peel the potatoes and cut into 5cm (2") square pieces
* Place the potatoes in boiling water and boil until soft (about 25 minutes)
* When the potatoes are cooked, remove and drain
* Add the crème fraîche, butter and milk
* Using a potato masher, mash to the desired consistency
* Season with salt and pepper
