Although this slow-cooked [[Oxtail stew|oxtail stew]] takes 5 and a half hours to cook, it only takes 15 minutes to prepare, is extremely economical and results in flavoursome [[Meat|meat]] that melts in your mouth.

===Ingredients===

* 3 tablespoons [[Plain flour|plain flour]]
* 2 kg [[Oxtail|oxtail]], trimmed of any excess [[Fat|fat]]
* [[Sea Salt|sea salt]] and [[Freshly ground black pepper|freshly ground black pepper]]
* [[Olive oil]]
* 800g [[Soffritto|soffritto]]

* 4 tablespoons [[Tomato|tomato]] purée

Preheat the [[Oven|oven]] to 150° C (300° F - gas 2)

# Season the [[Flour|flour]] well with [[Salt|salt]] and [[Pepper|pepper]]
# In batches (by using a plastic bag or a [[Lock & Lock]]-type box) add the seasoned [[Flour|flour]] and the trimmed [[Oxtail|oxtail]] and shake well to coat
# Heat a few tablespoons of [[Olive oil|olive oil]] in a flame-proof [[Casserole|casserole]] and [[Fry|fry]] the [[Oxtail|oxtail]] in batches for 2 minutes a side or until nicely [[Browned|browned]]. Set aside and repeat until all of the [[Meat|meat]] is done, using more [[Olive|olive]] [[Oil|oil]] if needed.
# Add a little more [[Olive oil|olive oil]] and sauté the [[Garlic|garlic]] and [[Soffritto|soffritto]] for 4 minutes, stirring regularly.
# Add the [[Oxtail|oxtail]] back into the [[Casserole dish|casserole dish]] together with the [[Guinness]], [[Stock|stock]] and [[Tomato|tomato]] purée.
# Stir well, bring to the [[Boil|boil]] and then carefully transfer to the [[Oven|oven]].
# Cook for 5 ½ hours

		+	Oddly enough, I made this yesterday, although it was an adapted version of the recipe in ''Chinese Cookery Secrets - How to Cook Chinese Restaurant Food at Home''. To make it more substantial, I allowed one chicken breast per person (I forgot to weigh them). I used beansprouts and French beans as the veg. So basically 4 breasts and 250g noodles worked out just right for 2 small eaters, 1 medium eater and 1 very greedy eater.
