Rheinischer Karotten - about this recipe
Servings
Serves 4
Ingredients
- 500 g carrots. scraped and sliced lengthways
- Pinch of sugar
- 2 onions, peeled and sliced
- Sunflower oil
- 250 g cooking apples, peeled, cored and sliced
- Salt and pepper
- Lemon juice
Method
- Boil the carrots with the sugar in just enough water to cover, until tender.
- Meanwhile, fry the onions in the oil until golden.
- Add the carrots and the water in which they have been cooking, and the apples to the onions.
- Cook until all of the ingredients are soft.
- Season and add a squeeze of lemon juice.
Serving suggestions
A general accompaniment to meat and fish.
Alternatives
Omit the salt an lemon juice and season with the juice of preserved lemons.
