Mashed potatoes


Mashed potatoes - about this recipe

Floury potatoes such as Desirée, King Edward or Maris Piper mash very well. Instead of a potato masher, you can use a potato to make really smooth mashed potatoes

Servings

Serves 4

Ingredients

  • 900 g) (2 lb) Desirée or King Edward potatoes
  • 2 oz (50 g) butter
  • 4 tablespoons milk
  • 2 level tablespoons crème fraîche
  • Salt and freshly milled black pepper

Method

  1. Peel the potatoes and cut into 5cm (2") square pieces
  2. Place the potatoes in boiling water and boil until soft (about 25 minutes)
  3. When the potatoes are cooked, remove and drain
  4. Add the crème fraîche, butter and milk
  5. Using a potato masher, mash to the desired consistency
  6. Season with salt and pepper

Serving suggestions

Serve hot, sprinkled with chopped chives
