Lime cordial - about this recipe
Lime cordial is a mixture of concentrated lime juice and sugar, sometimes used as a mixer for cocktails. While lime cordial can be diluted and consumed with vodka or water, any liquid will suffice.
The cordial this recipe produces is similar to Roses lime cordial.
Servings
Makes 3 litres of lime cordial
Ingredients
- Rind of 4 limes
- Juice of 8 limes
- 30g Citric acid (crushed vitamin c tablets are a good substitute)
- 1.5 kg Sugar
- 15g Tartaric acid
Method
- Boil 3 litres of water
- Combine citric acid, sugar and tartaric acid.
- Pour boiling water over the above combination
- Stir to dissolve.
- Add lime rind and juice.
- Cover and and leave overnight.
- Strain and bottle the mixture in sterilised bottles
Serving suggestions
Dilute with water or soda water according to taste.
