Cheese and ham quesadillas - about this recipe
A quesadilla is a dish in Mexican cuisine where cheese is placed on a cooking wheat or corn flour tortilla and then folded over and cooked until the cheese melts. Quesadillas are similar to the dish from San Salvador; pupusas
Servings
Makes 8 quesadillas; serves 4
Ingredients
- 4 flour tortillas
- 115g (4 oz) thinly sliced cooked ham
- 115g (4 oz) grated Emmental or Gruyere cheese
- 2 tablespoons double cream
- 1 tablespoon chopped gherkins or capers
Method
- Mix the grated cheese and double cream
- Roughly chop the ham and stir into the cheese mixture
- Heat 1 tortilla in a large heavy based frying pan
- Place a quarter of the mixture in the centre of the tortilla
- Cook for a minute or two
- Fold tortilla in half, flip it over and cook for another minute
- Keep warm while you cook the remaining quesadillas

Variations
Add some chopped pickled Jalapeño chillies if you like it spicy
