Cheese, apple and pomegranate salad - about this recipe
This salad also includes fennel and comes with a dressing of avocado oil.
Servings
Serves 4
Ingredients
- 1 large apple, diced
- 100g mature Cheddar cheese, diced
- The seeds of 2 pomegranates
- 1 bulb fennel, diced
- ½ teaspoon dijon mustard
- A pinch of sea salt
- 1 tablespoon cider vinegar
- 4 tablespoons avocado oil
- Freshly ground black pepper
Method
- Mix the first 4 ingredients in a bowl.
- Put the remaining ingredients in a jar and shake to mix thoroughly.
- Pour into the bowl, ensuring that the salad ingredients are coated.
Variations
Instead of Cheddar, try this with Mahón-Menorca cheese or Comté. You can of course use olive oil and wine vinegar to replace the avocado oil and the cider vinegar.
