Castelo Branco cheese
Castelo Branco is a semi-soft, DOP ewes’ or goats’ milk cheese from the town of the same name in the province of Beira Baixa, of which it is the capital. It is about 270 km northeast of Lisbon.
The cheese is white to straw yellow in colour and has a natural rind. It has a very intense smell and spicy taste which becomes stronger and saltier as it matures. It also hardens and becomes greyer in appearance.
The cheese is only produced during the autumn.
