Caciotta della sabina is a [[Goats' milk cheese|goats' milk cheese]] which is produced from February to November in Montopoli Sabino (Rieto) in the [[Italian]] province of Lazio.  The [[Milk|milk]] from Alpine and Saanen breeds.  It can have a cylindrical shape (height 5 cm, diameter 8 cm) or pyramid (height 12 cm).  The weight various from 125g to 500g and the rind is bloomy due to the presence of natural bluish-green [[Mould|mould]].  The interior is porcelain white is soft and creamy with a sour taste.

Caciotta della sabina is a goats' milk cheese which is produced from February to November in Montopoli Sabino (Rieto) in the Italian province of Lazio. The milk from Alpine and Saanen breeds. It can have a cylindrical shape (height 5 cm, diameter 8 cm) or pyramid (height 12 cm). The weight various from 125g to 500g and the rind is bloomy due to the presence of natural bluish-green mould. The interior is porcelain white is soft and creamy with a sour taste.
