Bleu du Haut-Jura, de Gex, de Septmoncel cheese

Bleu de Gex, also known as Bleu du Haut-Jura or Bleu de Septmoncel is an AOP creamy, semi-soft blue cheese made from unpasteurised milk in the Juras of Franche-Comté.

During production, penicillium glaucum mould is introduced and the unwashed curds are loosely packed. It is then aged for at least three weeks.

To meet Appellation d'Origine Contrôlée guidelines, it must contain only the milk of Montbéliard cows. It is flavourful for a French blue cheese. Each wheel is stamped with the word "Gex".
