About Bastardo del Grappa cheese

Bastardo del Grappa is a cows’ milk cheese from Massiccio del Grappa is the provinces of Belluno, Treviso and Vicenza. It can be made using pasteurised or unpasteurised depending on the producer.

The cheese has a soft yellow interior which changes colour and becomes grainier depending on its maturity, and has small holes. The rind is dry and clean looking.

Having a pleasant aroma, the cheese has a sweet, yet savoury flavour which becomes more intense with age. It is generally matured for around 25 days and can weigh from 2.5 to 5 kg. It has a diameter of 25 to 30 cm, and a height of 5 to 8 cm.
