Ardsallagh cheese

The Ardsallagh Goat Farm is located near Carrigtwohill, close to the city of Cork and they produce a range of artisan cheeses.

Ardsallagh hard goats cheese is a semi hard, mild cheese. It develops its famous taste as it matures, from an extremely mild cheese when young, to a distinctive flavour as it ages. The most mature Ardsallagh hard cheese can even be grated for a Parmesan-like taste. It is available in a range of different sizes. They also create a smoked hard cheese which is gently smoked over beechwood for a complex smoky flavour.

Ardsallagh soft goatscheese is a white cheese with a creamy texture. This cheese has a gentle flavour as it is made daily from their own fresh goats milk.
