Almkäse cheese - General information
Almkäse is made from Unasteurised semi-skimmed cows' milk. It matures for 7 to 8 months and is produced in the mountainous areas of Alto Adige (South Tyrol) in particular Val Venosta.
The shape is circular, flat with a diameter of 35-40 cm, 8-10 cm height. It weights 7-14 kg.
