About salads

Most salads need very fresh ingredients, which may not always be to hand if you're busy, but there are alternatives. Rice and pseudo-grains such as couscous can make a pretty good salad with the minimum of fresh ingredients. If you have a vegetable garden you can probably find something to add to them to liven them up a bit. Try adding a tiny amount of ingredients that pack loads of flavour like smoked bacon, capers, anchovies, olives, pickled chillies etc. Just a spoonful out of the fridge can totally re-invigorate a bland salad.
