I do hope this section grows because with the advent of freezers, preserving is not needed on the scale it used to be, however, some products like preserved lemons, pickled onions, dill pickles and chutneys, to name a few, are about taste and flavour, not preservation. As with dips and sauces, the added benefit of making rather than buying is that you can add your favorite ingredients so the end product is exactly to your taste.
