Caramel colouring

Caramel coloring is a water soluble food coloring; it is made by the carefully burning sugars. It is more fully oxidized than caramel candy and has an odor of burnt sugar and a somewhat bitter taste. Its color ranges from pale yellow to amber to dark brown.

It's commonly used as gravy browning but can also be used to colour meats, pickles, home-made beer and even cake icing.

As it usually only contains an E150 variant (caramel), salt, water and glucose syrup it is normally suitable for vegetarians.
