Braudostur cheese

Braudostur is a semi-hard, cows’ milk cheese from Iceland and is similar to Edam. Icelandic milk is renowned for its taste and purity, due to the quality of its grass. The cheese has a delicate, slightly sweet flavour. Young versions of the cheese have almost no aroma, but as they age, they become stronger in taste as well as aroma. It is usually matured for at least 16 weeks.
