Blue cheese and chive dressing - about this recipe
As blue cheese has a very strong flavour, it suits equally strong and bitter salad leaves such as chicory, rocket and radicchio
Servings
Makes 350 ml of dressing
Ingredients
- 75 g (3 oz) blue cheese (Stilton, Roquefort, Gorgonzola etc)
- 150 ml (1/4 pint) plain natural yogurt
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon freshly chopped chive
- Ground black pepper
Method
- Remove the rind from the cheese and crumble into half of the yogurt
- Add olive oil and lemon juice to the remaining yogurt and whisk to mix
- Season with black pepper and sprinkle in the chopped chives
Serving suggestions
Pour generously over salad leaves
