Sierra de Zuheros cheese

About Sierra de Zuheros cheese

Sierra de Zuheroas is a hard cheese produced with the milk of Murciana goats on small farms and co-operatives around the village of Zuheros (Córdoba). The cheese is dry, thin and almost crumbly. It has a discernible taste of goat, but it is not penetrating, and is smokey with hints of sweet wild thyme and lemon peel. The hard rind is sometimes smeared with paprika and oil, which gives the cheese a spicy aftertaste.
