Rocamadour cheese

Rocamadour is a young goats’ milk, AOC and AOP cheese from the départements of Aveyron, Lot and Tarn-et-Garonne (Midi-Pyrénées); Corrèze (Limousin); Dordogne (Aquitaine).
The cheese weighs just 35g and can be eaten after 12-15 days but the flavour becomes more intense after a few months. When young, it has the subtle flavours of cream and butter with a slight aroma of goats. With age, the texture becomes dryer and the aroma, stronger.
