Ricotta caprina cheese

Ricotta caprina is a cheese produced with goats' milk whey during the period of lactation of goats in some pastures and some dairies in the mountain area of the provinces of Udine and Pordenone in the Italian region of Friuli-Venezia Giulia. It has a trunacted cone shape, is rindless and is white, delicate, soft and creamy. It is consumed fresh.
