Raschera cheese

Raschera is a DOP pressed half-fat, semi-hard cheese made with partly skimmed unpasteurised or pasteurised cows’ milk, to which a small amount of ewes’ and/or goats’ milk may be added.

The cheese has an ivory white interior with irregularly spaced small holes, and a semi-hard rind which is reddish grey, sometimes with yellow highlights. It has a savoury and salty flavour, similar to Munster, and can be moderately sharp the longer it is matured. This can be from 30 days.
