Quesos Arribes de Salamanca cheese

Quesos Arribes de Salamanca are made by various producers from ewes’ milk in the Arribes de Salamanca. The production takes place in industrial dairies, but traditional methods are used at each stage.

The cheeses can be matured for two, five and twelve months and are of excellent quality. The rinds can vary from natural to dark and are slightly oily. They have a pleasant smell, and a spicy taste which intensifies as they mature.
