Queso de Abredo cheese
Queso de Abredo is a cows’ milk cheese from the village of Abredo, near Coana.
The cheese is poured into plastic moulds, where it is pressed for 15 hours. It is then submerged in brine for six to nine hours, and dried for one or two hours. Finally it is matured for at least 15 days in a cool and humid environment.
Having a pale yellow colour, with occasional holes, the cheese is cylindrical in shape. It has a soft white interior and a yellow rind. Its weight ranges between 500-1000 grams.
