Tetilla cheese (slice)

Queso Tetilla is a ‘Denominación de Origen Protegida’ pasteurised cows' milk cheese from Galicia in north-western Spain. It was traditionally made from the cow breed "rubia gallega", is quite soft and has a thin yellow rind. It is mild and is an excellent melting cheese. Its shape is very distinctive and is usually labelled in the Gallego "Queixo Tetilla".
