Pirineos cheese

Pirineos is a hard, pasteurised goats' milk cheese produced by Maria Pilar Marqués Costa y Juan José Baró Fort who started making cheese in 1994 in Benabarre (Huesca). The cheese is the only one in Aragón which is made entirely by hand.

The cheese is matured for 3-4 months, during which time it develops a thick, hard, brown rind, which is coated in white mould. It has an ivory interior, a compact, brittle texture and a clean pleasant aroma. The flavour has depth with notes of nuts and foliage, without being bitter, leaving a lingering scent on the palate. It is of medium strength.
