Petit fuxéen cheese

Created in 1999, Petit fuxéen made with unpasteurised cows' milk in Ariège in the Midi-Pyrénées region of France. It is a soft cheese which is matured for a month and a half. During this time, the rind is regularly washed. The flavour is sweet and creamy. It is produced in round shapes with the diameter ranging between 8 and 10 cm, but with a constant weight of 250g.
