Pecorino dolce dei Colli Bolognesi is a hard, ewes' milk cheese from the Italian region of Emilia-Romagna. It matures slowly so it has a mild and sweet taste in the first months of life and then take a stronger and more fragrant flavour with the progress of maturation. It is cylindrical in shape and has a dark brown rind.
