Pecorino della locride is an unpasteurised ewes' milk cheese which can also be mixed with goats' milk and is produced mainly from October to July in Calabria. It can be matured for several weeks to several months. The cheese can weigh from 1kg-3.5kg and have a slight convex cylindrical shape. It has a height of 7cm-15cm and a diameter of 10cm-25cm. The rind is wrinkled which bears the marks of a basket and is white in colour, becoming more ochre with age. It has a compact interior ranging from pure whit to straw-yellow, depending on how long it is matured. The flavour is mild and pleasant.
