Pecorino Rosso cheese

Pecorino Rosso is a hard, ewes' milk cheese made with lamb rennet from Sicily's Valle del Belice which is eaten fresh, semi-mature and mature. It has a pleasantly spicy, mild flavour with added red chilli flakes. Available throughout the region, it comes in cylinders or flat rounds with a weigh varying from 4 to 12 kg.
