Pavé de Margeride cheese

Le Pavé de Margeride is soft, unpasteurised, cows' milk cheese produced by Sylvie and Jean Mathieu at Lajo, near St Alban in the Languedoc-Roussillon region of France. It is a farmhouse cheese.
