Misto capra di Malga cheese

Misto capra di Malga is made with skimmed cows' (75%) and goats' (25%) milk. It is matured for about 2 months. It is cylindrical with a height of 5cm, a diameter of 30cm and a weight of 3-4kg. The rind is smooth and pale yellow and the interior is soft with small holes in the yellowish-white colour. It is produced from the 10th June to the 20th Sept, almost exclusively in huts Agordino (Belluno) in the Veneto region of Italy.
