Marzotica cheese

Marzotica is a mixed milk cheese (ewe and cow) from the province of Lecce in Italy's Puglia region. It has a circular shape with a height of 8 cm, a diameter of 12cm. The rind is soft and wrinkled, and these cheese is buttery with a yellowish-green colour. It matures in 10-15 days, is turned every day, and at the end of this period is wrapped in grasses.
