Heston's spiced butter

This is a fragrant, umami-rich butter to compliment several dishes.
Ingredients
- 2 tablespoons olive oil
- 1½ teaspoons ground cumin
- 1 teaspoon chilli powder
- 1½ teaspoons smoked paprika
- 1 teaspoon tomato ketchup
- ½ teaspoons Worcestershire sauce
- ½ teaspoon marmite
- 125g unsalted butter at room temperature
Method
- Heat the oil in a pan and fry the cumin and chilli powder for a couple of seconds
- Pour into a bowl and add the remaining ingredients
- Mix thoroughly
- Roll into a log and wrap in clingfilm or transfer to a lidded container, such as a Lock&Lock box
- This will keep in the fridge for up to a week or can be frozen for one month
Serving suggestions
Add to chilli con carne, braised mince, Bolognaise sauce, stews or toss it with pasta
