Grand Mémé cheese

Grand Mémé is made from local Charentais unpasteurised goatsmilk. The curd is drained overnight in a special small cloth. In the morning, the cheese is moulded in the cloth.

The cheese is both firm and crumbly. The rind is natural and bloomy. It is matured for 1 month and a half, during which it develops a more assertive flavour.
