Giglio Sardo cheese

Giglio Sardo is a Pecorino type cheese from Sardinia. It is made with ewes' milk and is matured for a minimum of 90 days. It is milky-white with sparse holes and has a crumbly texture. The flavour is not spicy but highly aromatic and typical of Pecorino cheese. The rind has the colour of brown leather because it is coated in caramel.
