Formaggio salato cheese

Formaggio salato is a hard, unpressed, cows' milk cheese produced in Carnia in the Italian province of Carnia. It is markedly salty as it is kept in brine for 2-4 months. It has a distinctive aroma and intense flavour, is white to pale yellow in colour and has holes of various sizes. The rind is smooth or slightly wrinkled and elastic, and darker in colour than the interior. The shape is cylindrical, with a weight of between 5.5 and 6.5 kg, diameter of 35-50 cm and a height of 8-12 cm.
