Formaggio da spalmare cheese

Formaggio da spalmare is a ewes’ milk cheese produced in the Matese mountains in the provinces of Benevento and Caserta.

The cheese is a creamy white ivory colour and sometimes contains chillies which give it a reddish tinge. It has a persistently strong aroma and a piquant flavour. It takes 2-3 months to mature and is kept in sealed glass jars.
