Formaggio caprino dell'Alto Mugello cheese
Formaggio caprino dell'Alto Mugello is a soft, fresh goats' milk cheese from Alto Mugello in the Firenze province of Tuscany.
The cheese is flavoured with chives, rocket and pepper and is disc shaped. The cheese is white and creamy, but as it matures it becomes pale yellow with a slightly tangy flavour. The very strong aroma changes according to the maturation period.
Rennet is added to the milk and salt and the curds are collected in baskets or moulds and left to dry. It uses milk from farms at an altitude of between 500-650m above sea level; goats graze mainly from February to November (snow permitting) and this allows the milk to make cheese with its characteristic aromas and flavours.
