Formaggio Caprino Morbido cheese

Definition: Soft goats' cheese
Characteristics: Elongated cylindrical shape: diameter 4-5 cm, length 10-12 cm. With herbs.
Area of production: Whole territory of Friuli-Venezia Giulia Region.
Techniques of production: Obtained from raw or heat treated (but usually not pasteurised) goats' milk, adding selected ferments. After a slow coagulation (24 hours) at 20°C, the curd is put in fabric bags where it remains for about 24 hours, then the dough is worked and salted.
