Doux de Montagne cheese
From Cookipedia
Doux de Montagne is a semi-hard, pasteurised cows’ milk cheese from Monts du Velay in the department of Haute Loire in the Auvergne.
The mild cheese, which resembles Havarti, has a sweet, nutty flavour, with a buttery texture and after taste. It has a brownish, inedible rind.
Some sources state that this cheese is from Aquitaine. However, the one I bought was from the Auvergne and this is backed up by other sources.
