The crumb

Crumb is a term used by bakers to define the inside of the bread, crust describes the outside of the bread.

By analysing the cell structure formation of bread, an expert can determine the flour-types, hydration and yeast quantities as well as the way the dough was mixed and baked.

Crust

By examining the colour and shape of the loaf and crust a baker can tell the fermentation balance, flour types, moulding techniques and the manner in which the bread was baked.
