Crescenza cheese

Crescenza is a rich, creamy, fresh, cows’ milk cheese which is also known as Crescenza Stracchino. It is produced in Lombardia, Piemonte and Veneto.

The cheese is similar to cream cheese and it becomes very soft and spreadable at room temperature. It is sometimes blended with herbs but does not age well. It is similar to Stracchino cheese.

Crescenza matures for only 2 to 5 days before being sold. As it ages for no longer than 1 to 2 weeks, the cheese expands in size, thus the origin of the name ‘crescere’, which translated means ‘to grow’ in Italian. Sold fresh, it has a moist texture with an acidic flavour, somewhat similar to yogurt.
