Chicken Provençal

A hearty, herby chicken stew. This is a quick version of the classic dish.
Ingredients
- 220 g chicken breast chopped
- 1 onion chopped
- 3 cloves of garlic crushed
- 1 red pepper chopped
- 400 g tin of Tomatoes
- 20 mls brandy
- salt & pepper
- Olive oil
- 1 teaspoon dried herbs de provence
Method
- Heat oil then soften onions and garlic until translucent
- Add chicken to brown
- Add brandy to deglaze the pan
- Add red pepper, tomatoes, herbs and seasoning
- Bring to boil then simmer for 30 mins
Serving suggestions
Plain rice or Crunchy jacket potatoes and a Green salad
