A quesadilla is a dish in Mexican cuisine where cheese is placed on a cooking wheat or corn flour tortilla and then folded over and cooked until the cheese melts.

Quesadillas are similar to the dish from San Salvador; pupusas

Ingredients

Method

  1. Mix the grated cheese and double cream
  2. Roughly chop the ham and stir into the cheese mixture
  3. Heat 1 tortilla in a large heavy based frying pan
  4. Place a quarter of the mixture in the centre of the tortilla
  5. Cook for a minute or two
  6. Fold tortilla in half, flip it over and cook for another minute
  7. Keep warm while you cook the remaining quesadillas

Serving suggestions

Serve with a salad or curtido

Variations

Add some chopped pickled Jalapeño chillies if you like it spicy
