Pais Vasco is on the Bay of Biscay in north-east Spain, and has its own language, culture, and history. The region has a warm, rainy climate, with a coast that has been is a source of seafood, and an interior of rolling hills and high, grassy plateaux, perfect grazing land for dairy cows and sheep, especially the Latxa breed whose milk produces Idiazábal cheese.
